What is a varietal honey? A varietal honey comes from a very specific nectar source. When honeybees are placed in a large field of one type of plant it will produce a varietal honey. 
For example; Orange Blossom honey is produced in Florida and California during Orange Tree pollination. The honey retains the light flavor of the orange blossom which is a delicate essence of the fruit.
